South Carolina She-Crab Soup
serves 4
Ingredients
- 1 T butter
- 1 T flour
- 1 qt milk, warmed
- 2 C crabmeat from female crab
- 1/8 t mace
- 1/4 C Madeira, warmed
- 1/2 C heavy cream, whipped
- parsley, chopped
Instructions
- Melt the butter, whisk in the flour and cook to form a blond roux. Gradually whisk in the milk. Add the crab and mace, and season to taste.
- Simmer while stirring for 20 minutes.
- Plate, dress with 1 T Maderia, garnish with whipped cream and parsley, and serve.
