South Carolina She-Crab Soup

Instructions

  1. Melt the butter, whisk in the flour and cook to form a blond roux. Gradually whisk in the milk. Add the crab and mace, and season to taste.
  2. Simmer while stirring for 20 minutes.
  3. Plate, dress with 1 T Maderia, garnish with whipped cream and parsley, and serve.
